These Avalanche Cookies are a delightful no-bake dessert that combines creamy peanut butter, sweet white chocolate, and crunchy rice cereal. Perfect for when you’re short on time but want a sweet treat with a stunning presentation.
Ingredients:
1/2 lb white chocolate (about 2 bars)
1 cup Rice Krispies cereal
1/2 cup mini marshmallows
1/4 cup creamy peanut butter
Dark chocolate (for drizzling)
Directions:
Melt the White Chocolate: Break the white chocolate into pieces and microwave in 15-second intervals, stirring each time, until fully melted and smooth.
Combine Ingredients: In a large bowl, mix the Rice Krispies and mini marshmallows. Pour in the melted white chocolate and creamy peanut butter, then stir until everything is evenly coated.
Shape the Cookies: Scoop small portions of the mixture onto a baking sheet lined with parchment paper. Flatten slightly to form cookie shapes.
Set in the Freezer: Place the baking sheet in the freezer for about 15 minutes, or until the cookies are firm.
Drizzle and Final Freeze: Melt dark chocolate and additional peanut butter if desired. Drizzle over the cookies and return them to the freezer until the drizzle sets and hardens.
