Ingredients:
For the Pickle Chips:
Bread and butter pickles, sliced
2-3 eggs, whisked
1 cup panko breadcrumbs
1/2 cup all-purpose flour
Salt, to taste
Pepper, to taste
1 tsp dried dill
For the Dip:
1/2 cup Greek yogurt
Salt, to taste
Pepper, to taste
1 tsp dried dill
2-3 splashes pickle juice
Directions:
Prepare the Pickles:
Lay your pickle slices on a paper towel and gently pat them dry to remove excess moisture. This step ensures a crispier coating.
Set Up the Breading Station:
In three separate bowls:
Bowl 1: Add flour and season with salt, pepper, and dried dill.
Bowl 2: Whisk eggs until smooth.
Bowl 3: Add panko breadcrumbs and season with a pinch of salt and pepper.
Bread the Pickles:
Coat each pickle slice in the seasoned flour, ensuring an even coating.
Dip the floured pickle into the egg wash.
Roll the pickle in the breadcrumbs to coat completely. For extra crunch, repeat the egg wash and breadcrumb coating process.
Bake:
Preheat your oven to 425°F (220°C).
Arrange the breaded pickle chips in a single layer on a parchment-lined baking sheet.
Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
Make the Dip:
In a small bowl, combine Greek yogurt, salt, pepper, dried dill, and pickle juice. Mix until well blended and adjust seasoning to taste.
Serve and Enjoy:
Serve the crispy pickle chips hot with your tangy Greek yogurt dip on the side.
Tips:
Double the batch for a crowd-pleasing appetizer or snack. These pickle chips are perfect for dipping into a variety of sauces, so feel free to get creative!
